We are what we eat.......otherwise.... We are what we shouldn't eat --- Unhealthy!
Organic eating is nothing new to our family, been doing it now for 7 years and counting.......I find it funny when people tell me they cannot afford eating organic foods, when I see them driving new cars, sporting expensive clothing, and well going out to eat or drink atleast once a week.
I feed a family of 5, I do my best to figure out our meals, and then only shop at our local farmer's markets, and Co-ops. Sometimes I even brake down and pick up a few items at Fred Meyers (even though their produce sucks!)
I am not a big fan of Trader Joes, but sometimes they do have a few items I can and will purchase. (Trader Joes IS NOT a health food store people). My children do love some of their items, and well.......they do have the best cherry chocolate chip Ice Cream that is dairy free......but isn't soy free :(
I spend around $250-$300. a week on food that will give us 3 meals a day plus snacks and lots & lots of fruits/veggies. Our meals are all made with grassfed meats, locally grown veggies/fruit, and I am always coming up with a dessert that will last for a couple nights. I pack a lunch every night for my husband, and anywhere I take the kids I always have snacks on hand. This way they cannot tell me they are hungry and make me stop somewhere to pick something up........
Now that I am primal cooking with the Paleo, I always have something that can be whipped up in no time , and I am finding my children aren't asking to eat every 5 mins.
Once I learn how to place tabs on my blog, I will seperate my foods into "Breakfast Lunch Dinner Desserts and Snacks". Since I homeschool I won't be sharing idea's for lunchboxes but I can show you what I do make for the kids that can be taken in a lunchbox or laptop container.

The first recipe I will start off with is for dinner:
Cilantro Sesame Chicken Thigh
8-10 pieces of organic chicken thighs with bone/skin
4 Tbls organic Seasme Oil
3 Tbls Raw Coconut vinegar (Coconut Secret)
4 Tbls Raw Coconut Aminos (Coconut Secret)
1 large Organic Orange Bell Pepper Sliced
1 large Organic Red Bell Pepper Sliced
1 medium Organic Yellow or Red Onion Sliced
5 Organic Garlic Cloves Peeled only
Handful Organic Cilantro chopped
Sea Salt few dashes
Organic Black pepper (We like a lot, to your desire)
Organic Red Pepper flakes few dashes
Organic Garlic Powder (We love garlic, to your desire)
Preheat oven at 350
Drizzle half the Sesame oil on the bottom of a glass baking dish
Layer the bottom with half of these ingredients, and keep the other half to place on top of chicken.
Orange, red bell peppers, Onion, and Garlic
Place chicken thighs skin down
Drizzle remaining Sesame oil, Both coconut vinegar, and Aminos (this taste just like Soy sauce).
Season with seasonings on both sides
Layer with remaining, Peppers, onions, and garlic.
Bake for 45 mins, then flip thighs and bake an additional 35 mins.
Pull out and let settle for about 10-15 mins before serving.
